My name is Jackellyn and today I will take over this blog. No, I am not hacking Marty I promise! She actually gave me permission to do a guest post as part of becoming blog besties for April's Hello box.

Today I'm going to share my recipe for my Doritos Cool Ranch Chicken. Let's get started.
What you need:
*Chicken, I usually use chicken breast but any part you prefer works
*Cool Ranch Doritos (or your favorite flavor of chips)
*Some sort of seasoning that isn't overpowering, I used Adobo which is awesome!
*Oil, whether it be olive or vegetable, you could even use Pam spray (or bake the chicken)
*An egg or two, depends on how much chicken
*Zip-lock bag
*Frying pan
Steps:
1. Cut your chicken into pieces or slices, however you enjoy it.
2. Rub some seasoning on the chicken, let it sit while you crush.
3. Add a handful of Doritos into the zip-lock bag, close and crush with a spoon or your hand. Use this time to really let your frustrations out. Then empty the bag and use a large plate to spread out the doritos.
4. Beat an egg (or two) in a separate bowl.
5. Heat up that pan with some oil.
6. Put some of your chicken in the egg solution and then transfer the chicken to the Doritos plate station where you coat it completely.
7. Make sure your pan is thoroughly heated and add some of your Doritos covered chicken. Cook thoroughly (no pink!)
8. Once your chicken is completely cooked and browned, you can take it out and place it on another plate with a paper towel to soak up excess oil.
9. Repeat steps 6-8 until all the chicken is used.
Serve and enjoy! I usually have a carb and veggies with every meal. Nick really enjoyed this meal and since we were able to use the Doritos instead of letting them go stale, he was happy.
